INGREDIENTS:
1 kg frozen potato chips
1 tablespoon vegetable oil
1 clove garlic, crushed
6 bacon rashers (420g), sliced thinly
1-1/2 cups (180g) coarsely grated cheddar cheese
1/2 cup (120g) sour cream
1 tablespoon finely chopped fresh chives
1 fresh small red thai chilli, seeded, chopped finely
METHOD:
Cooking time 25 minutes

METHOD:
- Preheat oven to moderately hot (200C / 180C fan forced ). Lightly grease oven tray.
- Place chips, in single layer, on tray; cook, uncovered, about 20 minutes or until brown.
- Meanwhile, heat oil in medium frying pan; cook garlic and bacon, stirring, until bacon is crisp. Drain on absorbent paper.
- Place chips on ovenproof serving platter. Sprinkle with bacon mixture and cheese; cook, uncovered, in oven about 5 minutes or until cheese melts.
- Meanwhile, combine sour cream, chives and chilli in small bowl.
- Serve chips topped with sour cream mixture.
